Frito pie is a great meal for prepping due to it’s simple ingrediants.
One can of chili, the shelf life on most chili is one year so this is a great item to keep on hand and can easily be worked into your normal everyday meals.
Powder cheese can be bought in #10 cans with a shelf life of 10 years. Just add water and you got a great topping for Frito Pie.
Frito chips may not be on the top of your list of everyday items but when you considered they are made out of corn meal, salt and corn oil then making your own isn’t that much of a big deal. At the bottom of the page is a quick and easy recipe for corn chips.
To make Frito pie heat the chili and cheese and add to the top of the corn chips. It’s that simple.
Corn chips recipe
1/2 cup corn meal
1 cup water
1/2 to 3/4 teaspoon salt
1 teaspoon vegetable or corn oil
Boil the water
In a bowl mix corn meal and salt together add a little of the water, about a 1/4 of a cup, until the mixture is smooth then add the oil and continue to mix. Add more water until the mixture is thick but still slightly runny.
Roll the batter out between two pieces of parchment paper until about a third of a inch think. Then remove the top parchment paper and place it on a cookie sheet. Cut the dough into corn chip size pieces and place on the parchment paper.
Cook in a preheated oven for about 10 to 15 minutes at 375 until crisp and golden brown.
Allow to cool.
